Curried Lentil Pie

Rinse lentils in water then add 1 part lentils to 4 parts water. Bring to the boil and then simmer for 18-20 mins, drain. Meanwhile heat oil in a large saucepan add celery, carrot, garlic and onion, cook for 5 minutes until softened, stirring occasionally. Add tikka curry paste, stir into vegetables and cook for a minute or so until fragrant. Add tomatoes, lentils and some water, cook for 5 minutes until thickened. Divide mixture among dishes. Place 1 pastry oval over each dish, pressing tightly around edges to seal, brush with dairy milk alternative and bake at 200°C for 20 minutes or until golden. Meanwhile, cook beans and tender stem broccoli until al dente and keep warm. Serve pies with tender stem and beans lightly seasoned with pepper.
