Caribbean Beef Brisket Bon Bon

Ingredients:

Directions:

  1. Make bon bon by squeezing any excess liquid from the filling mix. Shape into golf ball sized balls
  2. Roll balls in seasoned flour, then beaten egg and finally panko crumb. Place in a fridge until ready to fry.
  3. Meanwhile peel and dice sweet potato into even pieces and then steam for around 20 minutes until soft and tender. Place into a blender, add garlic powder, paprika and cream, blend until smooth. Return to pot, season to taste and keep warm.
  4. Deep fry bon bon for 6-8 minutes until golden brown, strain on kitchen towel.
  5. Place sweet potato puree in centre of plate, top with bon bon and finish with a drizzle of reggae reggae sauce. Garnish with lamb lettuce and sliced chilli.
