- Cut cauliflower into large ‘steaks’ and fry in cooking fat until charred on both sides. Place into a hot oven set at 200°C/GM6 for 18-20 minutes until cooked through but still with bite
- Serve on rocket leaves and drizzle with warmed chimichurri pesto
Top tip: Use excess cauliflower for Salt n Spicy Wings or place in a blender and blitz for a few seconds to make cauliflower rice to use in other dishes or thicken sauces
