Deep-fry chips at 175°C for 3 minutes 30 seconds. Allow 30 seconds to drain and then shake the basket. Make up gravy with granules and boiling water. Plate up, starting with the fries, then a liberal helping of gravy, topping with several chunks of goats' cheese and diced chives.
