Deep fry wedges until almost cooked. Whilst waiting heat the cheese sauce. When wedges are ready put them into an ovenproof dish and top with a drizzle of cheese sauce, Monterey Jack and Mozzarella/Cheddar mix. Finish off with Jalapeno peppers, diced tomato and chopped spring onion. Place in a hot oven until cheese is golden and melting. Garnish with a sprinkling of chopped chive.
