Hot Cross Bun Pudding

Ingredients:

Directions:

  1. Cut hot cross bun in half, spread each half with butter and marmalade then lay evenly in an oven proof dish.
  2. Crack eggs into a bowl, add milk, cream, vanilla paste and caster sugar, whisk together until well blended.
  3. Pour custard mix over hot cross buns and allow to soak for 20 minutes or so.
  4. Bake in a preheated oven set to 180°C/GM4 for 30 minutes
  5. Mix some marmalade with water and gently heat to create a glaze.
  6. Remove pudding from the oven, brush with glaze and return to oven for another 10 minutes.
  7. Once finished serve in a bowl with clotted cream ice cream and finish with grated orange zest.
