Hot Cross Bun Pudding

Directions:
- Cut hot cross bun in half, spread each half with butter and marmalade then lay evenly in an oven proof dish.
- Crack eggs into a bowl, add milk, cream, vanilla paste and caster sugar, whisk together until well blended.
- Pour custard mix over hot cross buns and allow to soak for 20 minutes or so.
- Bake in a preheated oven set to 180°C/GM4 for 30 minutes
- Mix some marmalade with water and gently heat to create a glaze.
- Remove pudding from the oven, brush with glaze and return to oven for another 10 minutes.
- Once finished serve in a bowl with clotted cream ice cream and finish with grated orange zest.
