Piquillo Peppers
In a large pan with a lid add the pesto, chopped roasted pepper and white wine, bring to a simmer. Once simmering add the cream and mussels, pop the lid on and cook for about 3 minutes until opened and cooked through. Serve with fresh torn basil.
