Ingredients:

Directions:

  1. Make a coulis by blending raspberries, icing sugar and water until smooth. Strain in a sieve to remove pips.
  2. Add cream, icing sugar and vanilla essence to a bowl and whip until soft peaks are formed.
  3. Break meringue into small pieces and gently fold into cream
  4. Pour a little coulis into a glass, spoon in some cream and meringue mix and top with fresh strawberries and a Little Moon cut into quarters.
  5. Repeat the process until glass in filled and garnish with mint.
