Lo-Cal Philly Cheesesteak

Add 1 part yoghurt to 1 part mayonnaise then add 1 part grated stilton and mix together, set aside. Was and drain lettuce, slice tomato. Peel and slice onions, dry panfry until charred and crispy. Season bavette with salt and pepper, pan fry for 1-2 minutes on each side until cooked rare-medium, leave to rest, then slice across the grain at a slight angle.

 

Assembly – Lay one slice of bread on a work surface and layer with caramelised onions, tomato slices, little gem lettuce and blue cheese mayonnaise. Top with slices of bavette and rocket leaves and sandwich with another slice of bread. Cut in half and serve with extra blue cheese mayonnaise.
