Place a heavy non-stick pan over a low/medium heat. Divide half of the cheese between the 4 tortillas, making sure to only load one half. Top each with the pulled pork, sweetcorn, jalapenos, diced tomatoes and spinach. Add the remaining cheese and fold the tortillas in half. Press gently and carefully lift into the hot pan. Cook until crisp and golden, flip and cook until crisp and golden. Cut into 3 and serve with pots of sour cream, salsa, guacamole and crispy salad garnish.
