In a large pan with a lid gently cook the onion and garlic until soft. Add the chorizo and cook until the oils release. Now add the saffron, white wine and chopped tomato, simmer for 2 minutes. Add the mussels and pop a lid on and cook for 3 minutes until the mussels open and are cooked. Stir in the chopped parsley and serve.
