Wash and drain the lettuce, then wash and pick the coriander. Dice up the avocado and red pepper and thinly slice red cabbage and red onion. Drain the chickpeas and crumble the feta. To assemble place the lettuce on the bottom, followed by all the diced and sliced veg, the coriander, diced beetroot and chickpeas. To finish sprinkle some of the crumbled feta and pumpkin seeds over the top.
