Stretch the dough to about 12” Place the dough on to a pizza paddle lightly dusted with flour. Spread the pizza sauce on the base. Scatter over the mozzarella cheese, dot with the Nduja, arrange the pepperoni and scatter over the olives and jalapenos. Cook in a hot oven until bubbly and crisp on the crust. Serve straight away either as is or with a little peppery rocket for freshness.
