Cauliflower Dhal

Ingredients:

Directions:

Soak lentils in salty water for up to two hours (this will reduce cooking time). Drain and rinse when ready. In a large pan heat cooking oil to medium heat and cook onion gently.

Add curry powder, mixed peppers and lentils.

Mix until everything is coated with the spices, cook for 2 minutes mixing gently. Add coconut milk and simmer for 15 -20 minutes. Add cauliflower florets and cook for a further 5 minutes. Garnish with Greek yoghurt and coriander. Serve with paratha flatbread
