Curried Lamb Burger

- Add diced onion, curry powder and mango chutney to the lamb mince. Mix all ingredients together and then mould into preferred sized patties, leave until ready to cook.
- Shred cabbage finely, slice spring onions and radish, grate carrot. Mix everything in a bowl with lime juice and icing sugar, leave to macerate until ready to use.
- Dry fry curry powder in a pan for a minute or so, allow to cool and then mix with mayonnaise and mango chutney.
- Deep fry or oven bake onion bhaji.
- Griddle burger patty for 3-4 minutes each side until cooked through and slightly charred, lightly toast underside of burger buns.
- Build the burger by spreading the curried mayonnaise on the base bun, add lambs lettuce then the burger. Top with Asian slaw, onion bhajis and the top bun smothered with more curried mayonnaise.
