Cook the Impossible nuggets until hot and crisp. Warm the ciabatta in the oven for 5 minutes. Slice the bread open. Spread the base of the bread with pesto. Add the vegan mozzarella. Now arrange the spinach, followed by the sun blush tomatoes. Place the nuggets along the bread and scatter over the pinenuts. Spread the vegan mayo on the underside of the lid, pop on the sandwich, slice in half and serve with a salad garnish.
