Mumbai Fries Dirty Fries

Preheat oven to 190°C/Gas 5, then cook the bhajis from frozen for 18 minutes. Mix 1 part concentrated tikka masala sauce with 1 part water, then add defrosted chicken and heat through in a pan for 5-10 minutes. Deep fry chips at 175°C for 3 minutes 30 seconds. Allow 30 seconds to drain and then shake basket. Plate up, starting with the fries, then the chicken and sauce, topping with two crumbled bhajis and one poppadum. Finish with liberal dollops of mint dressing and mango chutney, plus finely chopped coriander.
