Mix required amount of Fish stock with water and bring to a gentle boil. Add soy sauce, crushed chillies & star anise. Allow to infuse for 20 mins on a gentle heat. Meanwhile soak noodles in warm water until softened, about 15-20 mins. Cook prawns in stock for about 5-8 mins until pink, add noodles and bring to boil. Remove from heat immediately and pour contents into serving bowl. Garnish with lime wedges, sushi ginger, coriander leaves and diced chilli.
