Slice the sourdough, rub with oil and griddle until bar marked, whip cream until slightly thick and add horseradish to taste. Finely slice and pan fry red onion until softened then add balsamic glaze until coated. Fry steak rare to medium, whilst steak is cooking spread generous amount of cream over sourdough, top with glazed onions and steak slices, finish with wild roquette, grana Padano shavings and a drizzle of olive oil
