Place a piece of foil, large enough to wrap the fish onto a counter and brush with oil. Lay Sea Bass fillets down and top with fresh coriander leaves, rough chopped garlic, half a chilli sliced lengthways, sliced lemon, a knob of butter and season with salt and pepper. Wrap the fish in foil making sure no air can escape and place on hot coals or in an oven set to 200?C/GM6 for 15-20 minutes. Unwrap foil just before serving, sprinkle with coriander leaves and lemon wedges.
