Tuna
Lightly brush the tuna with oil then sear in a hot frying pan for 2-3 minutes each side. Transfer to a plate layered with mixed sesame seeds and coat liberally.
Pea Shoot Salad
Cook, cool and peel edamame beans. Wash and trim spinach leaves. In a bowl add spinach to pea shoots and edamame beans. Add twists of lemon rind.
Slice tuna supreme along the grain and place on pea shoot salad. Squeeze lemon juice over the fish and finish with a drizzle of Teriyaki dressing.
